easy protein pancakes

SERVES: 2 | PREP TIME: 10 MINUTES | COOK TIME: 15 MINS | DIFFICULTY: EASY | EQUIPMENT NEEDED: FOOD PROCESSOR, FRYING PAN, SHALLOW OVEN DISH

 
 

Ingredients

  •   1 Banana

  •   2/3 Cup oats (75g)

  •   3 Large eggs

  •   2 Tbsp milk (or non-dairy alternative)

  •   1 Tbsp baking powder

  •   1/8 Tsp cinnamon

  •   1 Scoop protein powder (chocolate or vanilla)

  •   Coconut oil (or other flavourless cooking oil)

  • Toppings of choice; nut butters, maple syrup, fresh berries & fruit.

 

METHOD

  1. Combine the banana, oats, eggs, milk, baking powder, cinnamon & protein in a blender until smooth (make sure the oats are fully broken down)

  2. Heat a small amount of oil in a pan and pour in separate ladle’s of the batter.

  3. Cook for 1-2 minutes until bubbles start to appear on the top. Flip each pancake and cook through for another minute.

  4. Transfer the cooked pancakes to a warm oven and repeat the process until all the batter has been used.

  5. Serve in stacks with toppings of your choice
