easy protein pancakes
SERVES: 2 | PREP TIME: 10 MINUTES | COOK TIME: 15 MINS | DIFFICULTY: EASY | EQUIPMENT NEEDED: FOOD PROCESSOR, FRYING PAN, SHALLOW OVEN DISH
Ingredients
1 Banana
2/3 Cup oats (75g)
3 Large eggs
2 Tbsp milk (or non-dairy alternative)
1 Tbsp baking powder
1/8 Tsp cinnamon
1 Scoop protein powder (chocolate or vanilla)
Coconut oil (or other flavourless cooking oil)
Toppings of choice; nut butters, maple syrup, fresh berries & fruit.
METHOD
Combine the banana, oats, eggs, milk, baking powder, cinnamon & protein in a blender until smooth (make sure the oats are fully broken down)
Heat a small amount of oil in a pan and pour in separate ladle’s of the batter.
Cook for 1-2 minutes until bubbles start to appear on the top. Flip each pancake and cook through for another minute.
Transfer the cooked pancakes to a warm oven and repeat the process until all the batter has been used.
Serve in stacks with toppings of your choice
