chocolate peanut butter protein bar

SERVES: 12 | PREP TIME: 15 MINUTES | COOK TIME: 30 MINS | DIFFICULTY: MODERATE | EQUIPMENT NEEDED: FOOD PROCESSOR, MIXING BOWL, FRYING PAN, SHALLOW OVEN DISH, FREEZER

 
 

Ingredients

  •   2 Cups of oats

  •   3 Scoops of Chocolate Refuel Protein+ (90g)

  • 1/2 Cup rice crisps cereal

  • 1/4 Cup honey

  • 1/3 Cup peanut butter

  • 1 Tsp vanilla extract

  • 1 Tbsp cacao nibs

 

METHOD

  1. Line the shallow dish with parchment paper or lightly grease with cooking spray

  2. Place oats in a food processor and pulse until a coarse flour consistently (some whole oats are fine)

  3. In a medium bowl, mix the processed oats with protein powder and cereal

  4. In a small pan over medium heat, stir in honey and peanut butter until combined. Remove from the heat and stir in vanilla extract and pour mixture over the oats.

  5. Using your hands, press mixture into the shallow dish (add a splash of water to loosen mixture if needed)

  6. Sprinkle cacao nibs over compressed mixture and place in freezer for 30mins before slicing into bars.
